Passata di Pomodoro, or puree'd tomatoes, is prepared at home by almost every family in Italy from the time that tomatoes were first introduced to Italy. Fresh tomatoes are washed, boiled, passed through a strainer to remove peels and seeds, then jarred and sterilized in boiling water.
